Vegetarian School Lunch Ideas – Week Two

I made it through my first full week of school lunches! There were some things I loved about it, and other things I did not love. Here are my school lunch ideas from the week, and how everything went down. They aren’t in any particular order.

  • Leftover Pizza
  • Strawberries
  • Thawed Frozen Peas

I cut the top off of the banana to fit it into the container, and apparently the teacher had a hard time opening it, which made me laugh. Jack didn’t eat his bunny grahams, this day or the next day.

  • Grilled Cheese
  • Grapes
  • Baby Carrots

This lunch was a dud. Jack didn’t eat the grilled cheese, or the carrots. He had a few grapes and he ate a few strawberries in his snack. Poor kid must have been hungry by the end of the day.

  • Vanilla Yogurt
  • Fruit Snacks
  • Multigrain Cereal Oh’s

Lunch

  • Leftover Corn
  • Cinnamon Raisin Bagel with Butter
  • An American Cheese Slice Cut into Fours

This was an empty-refrigerator day for me. It pained me to load this lunch and snack up with so many carbs and so few fruits and veggies, but I did the best I could. Jack didn’t eat the cheese or the corn.

  • Cheese Quesadilla
  • Pretzels
  • Corn Chips
  • Leftover Corn

This snack was a bit of a test, Jack loves apples but he won’t them when they turn brown. Needless to say, he didn’t eat the apples, next time I will need to soak them in lemon water to keep them white. He also didn’t much of the lunch aside from the chips. Lesson learned, don’t pack chips!

The more colors I get into Jack’s lunch and snack, the happier I am. Especially with some of the other lunches this week. This was my favorite lunch, with three colors and the protein from the meatless nuggets. I learned that I have to get a cold pack though, Jack wasn’t happy about the state of his cheese when lunch time came around.

This week I got better at the scheduling of lunch prep. Some days I made the bulk of the meals the night before, which made the mornings so much easier.

    I love these lunches! I just started making lunches for my little and I am not quite up to speed this year. I feel like the summer went by so fast, I barely had time to prepare. Maybe by the time Lucas is in middle school I’ll have it down, 🙂
